Veal Parmigiana

Ingredients:

Olive oil
Oregano
Parmesan
Sugar
Salt
Pepper

10 veal cutlets
1 cup all-purpose flour
2 eggs
1 ½ cups Italian breadcrumbs
1 cup tomato sauce
1 mozzarella
Directions:
1. Place the veals in a resealable bag and tenderize it.
2. Whisk 2 eggs together with 1 teaspoon of salt and ½ a teaspoon of pepper.
3. Pour 1 and a ½ cups of Italian seasoned bread crumbs into a separate bowl.
4. Pour 1 cup of flour into a separate bowl.
5. Dip the veal into the eggs.

6. After the veal has been coated in egg, lightly cover the veal in flour.
7. Then proceed to cover the veal in the Italian seasoned bread crumbs.
8. Pour 500ml of olive oil into a frying pan and turn the heat to high.
9. Once the oil is hot enough, place the coated veals in the oil and let them fry until both sides are golden brown.
10. Pour 350ml of tomato sauce into a bowl with 1 tablespoon of crushed oregano and ½ a tablespoon of salt.
11. Cut the mozzarella into 1-inch slices.
12. Place the fried veals into a baking dish, adding around 1 tablespoon of sauce on top of each veal.
13. Sprinkle parmesan cheese onto each veal along with a mozzarella slice.
14.Bake at 450°C for 10 minutes.
